Spicy Grilled Corn on the Cob 
with Fresh Lemon & Cotija Cheese


INGREDIENTS: 

4 ears of corn
¼ cup mayonnaise or (for lighter version, Greek Yogurt)
1 large garlic clove, minced
1 tsp lemon juice
1 tsp cayenne Pepper
1 tsp Cumin
1 cup Cotija cheese
5 tbs minced cilantro
4 lemon wedges
Salt & Cracked Pepper to taste

HOW TO: 

Soak corn husks in cold water, 30 min. Pull husks down, leaving husks attached to base of cob, remove silk. Grill corn on medium heat, turning until lightly charred & blackened, about 20 min.

In small bowl mix mayo, garlic, lemon juice, cayenne powder, cumin. Crumble Cotija cheese on plate and roll cobs. Garnish with cilantro salt & pepper, squeeze of lemon. YUM!
