ROASTED GREEN CHILE GUACAMOLE


INGREDIENTS: 
Prep 15 minutes

2 green chiles Poblano or Anaheim (roasted)
3 large ripe avocado
1/2 white onion, peeled and finley chopped
1 serrano chile, finely chopped (optional)
1 garlic clove minced
2 tablespoons lime juice
1/2 cup fresh cilantro, finely chopped (optional)
1 teaspoon salt

HOW TO: 

Roast the green Poblano chiles and remove the skin.

Mash the avocado with a fork until almost smooth. Chop green chiles until fine. Fold in the remaining ingredients and the chiles into the mashed avocado


*How to Roast Chile

Roast chiles under medium heat on broiler, on a hot grill, over open fire stove top. Clean chiles and dry , put chiles under (broil) or over the heat and turn every minute or so until the skin is blackened.  Roast until chile is charred about 70%, 5 to 10 min.  Carefully remove chiles. Carefully place the chiles into a plastic bag and seat. Steaming the chiles so skins are easy to remove. Sweat chiles for 10-15 min, Remove the chiles from the bag, when you remove them, rub the chiles to remove the skins. Use a knife to remove any skin that sticks.
