Pumpkin Spice Granola


INGREDIENTS: 
4 cups gluten free rolled oats

1 cup raw almonds

1 cup pumpkin seeds

1 cup dried cranberries

1 tsp cinnamon

2 tsp pumpkin spice

1 tsp fresh vanilla

4 tbs organic pure maple syrup

¼ cup (4 tbs) coconut oil

HOW TO: 

In a large bowl mix together oats, almonds, pumpkin seeds (make it your own and use your favorite nuts and seeds) cinnamon and pumpkin spice. Stir in vanilla, maple syrup and coconut oil. Spread evenly over a baking sheet and preheat oven to 350. Cook for 20 to 30 minutes, turning a couple of times until lightly toasted. Leave to cool and crisp up before stirring, toss in cranberries (or your favorite dried fruit) Granola will keep in an airtight container for up to 2 weeks
