"Lucky" Black-Eyed Pea Soup With Turkey Bacon & Veggies
INGREDIENTS:
Cook Time: 1 1/2 - 2 hours 2 tablespoons olive oil 1 1/2 cups small dice onion 3/4 cup small dice green pepper 1/2 cup small dice celery 1 cup of chopped carrots 1 cup of spinach 2 tablespoons minced garlic 1/2 package Turkey bacon 1 pound black eyed peas, rinsed 10 cups of chicken stock 2 bay leaves ½ teaspoon thyme 1 teaspoon salt 1 teaspoon black pepper 1/2 cup nonfat plain yogurt (optional) ½ avocado (optional) |
HOW TO:
Heat large soup pot to medium low, add olive oil. Once hot, add the onions, bell peppers, celery to the pan and cook until soft, 4 to 5 minutes. Add the garlic & sauté for about 30 seconds. Add the turkey bacon and peas, and sauté for 4 to 5 minutes. Add the chicken stock, bay leaf & thyme & bring to a boil. Reduce the heat to a simmer, cover the pot, and cook, stirring occasionally, until peas are tender, about 2 hours (sometimes its done 1 hour ½) keep checking. When done serve soup with 1 tablespoon of plain yogurt and chopped avocados. YUM!
