Healthy, Avocado-based, Chocolate Chip Cookie
Ingredients:
1 cup avocado, ripe, but not brown ½ cup coconut sugar (or your favorite sweetener) 1 egg ½ cup dark cocoa powder 1 tbs vanilla ½ cup bittersweet or semi-sweet dark chocolate 65% (or a bar 85% cocoa chopped) ½ tsp. baking soda |
How to:
Preheat oven to 350. Using a hand mixer, mix avocado and coconut sugar until smooth, add in 1 egg. Mix in the cocoa powder and baking soda .Fold in chocolate chunks. Spray baking sheet with non stick cooking spray or you can use parchment paper, which ever you prefer. Bake for 8-10 minutes. Cool before eating. Store in an airtight container in the fridge.
