Grab n’ Go Veggie 
Quiche Squares


INGREDIENTS: 


Prep 10 min     Cook 20 - 25 min

1 cup of spinach (washed bag spinach)
1/2  cup chopped broccoli
1 cup liquid egg substitute
1/2 cup shredded parmesan cheese
1/4 cup diced green pepper
1/4 cup diced onion
Salsa (optional)

HOW TO: 

Preheat oven to 350°F. Spray pan with cooking spray.

Combine the egg substitute, spinach, broccoli, peppers, and cheese, in a bowl. Mix well Pour mixture into an 8 x 8 inch glass baking dish or a 9 inch glass pie plate. 

(You can also use a 12-cup muffin pan)
