Fresh Zesty Lime Shrimp Scampi with Zoodles
(Zucchini Noodles)
INGREDIENTS:
Serves 4 Cook Time: 10 min 1lb shrimp, cleaned, shelled, and deveined 4 med zucchini 1 tbs butter 2 tbs olive oil 2 garlic cloves, minced ½ Tsp crushed red pepper flakes ½ lime (use the other half for garnish) ¼ white wine 1 cup quartered frozen artichoke hearts (can, drained is also fine) 1 cup halved cherry tomatoes Freshly ground black pepper and sea salt to taste Chopped fresh parsley for garnish Grated fresh parmesan Slice of lime |
HOW TO:
Using your Spiralizer (or julienne peeler) prep zucchini noodles
In large nonstick sauté pan over medium heat, add olive oil, butter, heat for a minute, add in garlic and red pepper flakes, and cook for another minute constantly stirring.
Add Shrimp, cook for a 1 ½ minutes on each side, add salt and pepper, and cook until they’re pink on all sides. Leaving liquid in the pan, transfer shrimp with a slotted spoon to bowl
Increase heat to medium; add in fresh lime juice, and ¼ cup of white wine, cooking for 2 minutes
Add in artichoke hearts cooking for 2 – 3 minutes, add cherry tomatoes and zucchini noodles stirring occasional for 2 minutes. Add shrimp to pan and toss.
Garnish with a squeeze of lime, parsley, and grated parmesan. Season with salt and cracked pepper to taste. Enjoy!
