Crispy Baked FISH n CHIPS
with Sweet Potato Fries
INGREDIENTS:
Fish: Olive oil cooking spray 1 ½ cups of Panko ½ cup cornmeal Kosher salt & black pepper 3 large egg whites 1 1/2 pounds skinless, boneless firm white fish ( I used Cod) cut into 2-by-4-inch pieces Fries: 2 large potatoes, peeled 4 tablespoons olive oil 3/4 teaspoon coarse sea salt |
HOW TO:
Baked Crispy Fries:
Heat oven to 450°. Cut potatoes in half (long); cut each half into 1/4-inch-thick fries and place in a bowl of cold water for 10 minutes. Take fries out of water and dry thoroughly. In a bowl toss with oil and sprinkle with salt, mixt. Place on a flat cookie sheet. Roast until browned and cooked through, turning occasionally, 25 - 30 minutes
Preparation for Fish:
Coat baking sheet with cooking spray. Add Panko & Cornmeal in a bowl. Add 1 teaspoons salt, and black pepper to taste. In another bowl, Wisk egg whites and a pinch of salt until frothy.
Dip the fish in the egg whites, then roll in the panko & cornmeal to coat. Place fish on the rack position fish on their sides so that most of the crust is exposed, and mist with cooking spray, this will help the fish get crispy & brown.
Cook fish for about 12 minutes. Season with salt and black pepper. Wah la! Baked Fish n’ chips, serve with tartar sauce or malt vinegar (my fave). Enjoy!
